Meat free Monday: Oriental Noodle Salad

I’m always looking for easy and healthy recipes, thankfully this tweaked oriental classic is as tasty as it is good on the waistline. It’s also perfect for the summer and super easy, yet incredibly authentic.

For this delicious noodle salad you will need (for 4 people):

  • 200g fine egg noodles
  • 130g French beans
  • ½ cucumber
  • 6 spring onions
  • 12 basil leaves roughly chopped
  • Small bunch of mint roughly chopped
  • Small bunch of coriander roughly chopped

For the dressing:

  • 3 tbsp. rice vinegar
  • Grated zest and juice of 1 lime
  • ½-1 red chilli finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp. soft brown sugar
  • 1 tsp. toasted sesame oil
  • 1 tsp. soya sauce

Methods:

  • Whisk all the ingredients for the dressing in a large bowl.
  • Cook the noodles according to the instructions on the packet, drain and rinse In cold water
  • Add the noodles to the dressing and toss until all the noodles are well coated, leave to cool
  • Bring some salted water to the boil and cook the beans for 3-5 minutes so that they are still crunchy
  • Drain and rinse in cold water
  • Halve the cucumber lengthways and slice thinly
  • Thinly slice the spring onions diagonally
  • Mix the herbs, cucumber, spring onions and beans with the noodles and serve with soy sauce on the side
